Like rum, cachaça is made from sugar cane, but while rum is made from molasses and other byproducts of the sugar extraction process, cachaça is made from fresh sugar cane juice. Cachaça is the most common liquor in Brazil, and when it's not consumed straight it's usually in caiprinhas, a delicious mix of cachaça, fresh lime juice and sugar.
